Paleo Spicy Pork Recipe with Thai Chili

This sweet and spicy pork marinade is one of my favorites. You can amp up or tone down the heat based on which chili you pick and whether or not you choose to omit the seeds. I tend to always go for two Thai chili, sans seeds, and I think it delivers the perfect amount of spice that is nicely complemented with the sweetness of the juice and the sugar. If you are looking for something a little tamer, I would go with jalapenos or something milder, but I recommend going for the fire if you can handle it — it’s so yum — and it pairs great with a frosty brew 🙂

Paleo Spicy Pork Recipe with Thai Chili

  • 2 pork loin cuts, approx. 1 pound, fat trimmed
  • 1/4 cup coconut aminos
  •  2 TB coconut palm sugar
  •  2 cloves garlic
  •  1 TB grated ginger
  •  2 cayenne chili peppers (use 1 if you are using a Thai chilli), seeded and diced
  •  1 TB coconut oil, plus a little extra for searing
  •  Juice and zest of 1 orange
  •  Salt and pepper to taste

– Preheat oven to 350 degrees

– Combine all ingredients in a blender

– Pour blended mixture over pork and marinade overnight or at least 4 hours.

– Heat approx 1TSP of coconut oil in cask-iron skillet.

– Sear pork for approx. 2 minutes on each side

– Transfer skillet to oven and cook for 18 to 20 minutes, until cooked through.
