Paleo Balsamic-Dijon Chicken Marinade Recipe

chicken marinade recipe, chicken marinade with balsamic and honey mustard, paleo chicken marinadeThis chicken marinade is super simple to make — you can whip it together in about 5 minutes — it’s tasty, and is totally Paleo-friendly and gluten- and dairy-free. It’s one of my husband’s favorites, so I make it several times a month, and it never gets old. It has a bit of spice to it, so if that isn’t your thing, you can omit the red pepper flakes to tame it a bit.

This pairs well with any cut of chicken — breasts, thighs, etc. — and makes a good marinade for chicken wings on the grill or in the oven, as well as for different cuts of pork.

While I have cooked this on the stove top and the grill several times, I prefer this baked, since you can cook the chicken in its marinade and spoon a bit of it over the final product as a sauce for some extra flavor. Enjoy!

Paleo Balsamic-Dijon Chicken Marinade Recipe

  • Approx 1 pound boneless, skinless chicken breasts, organic and hormone-free
  • 3 TB Dijon mustard
  • 2 TB balsamic vinegar
  • 2 cloves garlic, minced
  • 1 TSP paprika
  • 1/2 TSP red pepper flakes
  • Fresh pepper to taste

– Preheat oven to 400 degrees

– Combine mustard, balsamic, paprika, garlic, red pepper, and fresh pepper. Mix to combine.

– Pour marinade over chicken in plastic bag and marinade for 4-8 hours.

– Cook chicken for 20 minutes or until cooked through. Let rest for five minutes and serve!
