Paleo Baked Eggs in Avocado Recipe

Paleo baked eggs, baked eggs in avocadoThe only thing better than an avocado in your omelette is an egg in your avocado.

Avocado is usually a fail-safe add-in in most meals, but flipping the script and making it the main dish is just as delicious — and something every avocado-lover needs to try.

This dish is great for a snack or breakfast on the go. It requires very little effort to put together and minimal ingredients. It’s also super filling for a small meal and is loaded with healthy fats, fiber, protein, potassium and a slew of vitamins, including vitamin E, B and folic acid.

I usually top this with some uncured turkey bacon — Applegate Organics is my favorite — but this would work with ham or some chopped red pepper, too.

Paleo Baked Eggs in Avocado Recipe

  • 1 avocado
  • 2 eggs
  • 2 slices uncured turkey bacon, crumbled
  • Fresh pepper and Cayenne pepper to taste (optional)

– Preheat oven to 400 degrees

– Slice avocado down the middle and remove pit.

– Depending of the size of the avocado, you may need to spoon some of the avocado flesh out to make enough room for the egg.

– Crack each egg into a separate bowl and carefully spoon the yolk, followed by the whites into the avocado. You may have to leave out some of the whites depending on how much room you have. Don’t overfill.

– Place the avocados in a small casserole dish, leaning the side of the avocado up against the wall of the dish so it doesn’t spill over while cooking. Top with fresh pepper, salt and Cayenne (optional).

– Cook for 15-20 minutes or until the eggs are cooked to desired (I like my whites to be set but my yolk to be slightly soft). Top with crumbled turkey bacon and enjoy!
