Healthy Pork Fried Cauliflower Rice Recipe

If I’m every traveling, he has the local Chinese takeout restaurant on the phone the minute my foot steps out the door. It’s an essential factor in his “me” time and his favorite splurge in terms of non-clean eating items.

Pork fried rice is his favorite, so I whipped this up one night to try to feed his Chinese food craving. This is spouse-approved, extremely delicious and flavors are definitely there but — spoiler alert —  this obviously isn’t the greasy takeout that has come to be his beloved “cheat” — thus the basis of its appeal. Yum.

Healthy Pork Fried Cauliflower Rice Recipe

  • 1 cauliflower, florets separated (cauliflower ‘rice’)
  • 4 slices uncured bacon, chopped
  • 3 cloves garlic, minced
  • 1 shallot, chopped
  • 1 carrot, chopped
  • 2 cups frozen peas
  • 6 scallions, minced. Save about 1/2 TB for garnish.
  • 5 TB coconut aminos
  • 2 eggs, whisked
  • 2 TB rice vinegar
  • 2 TB sesame oil
  • Salt and pepper to taste

– Heat 1 TB sesame oil in wok or cast iron skillet over medium heat. Add chopped bacon and cook until crispy. Set aside.

– In same pan, add remaining oil, shallot, garlic. Cook until translucent.

– Add carrots, scallions and peas. Cook until peas are cooked through and carrots are softened.

– While vegetables are cooking. Add cauliflower florets to a food processor and pulse until they are the size and consistency of rice grains. You may need to do this in two batches.

– Add cauliflower rice to pan with coconut aminos and vinegar, and salt and pepper to taste; reduce heat to low and cover. Cook for about 5 minutes.

– Push all ingredeints over to one side of the pan, add scrambled eggs to other side of pan, and cook until soft, but not runny. Mix both sides of pan to combine eggs with rice and veggies.

– Add cooked bacon; toss to combine. Garnish with scallions. Serve warm. Yum!
