Fruit and Nut Summer Kale Salad Recipe

This kale salad is hearty, yet light — loaded with a combination of dried and fresh fruit and toasted almonds — and is topped with a citrus-based, low-calorie dressing. Yum.

It’s one of my summer favorites — although, pretty much any kale salad is — and it’s really tasty on its own or topped with some grilled chicken or steak. Enjoy.

Fruit and Nut Summer Kale Salad Recipe

  •  3 TB coconut oil
  • 6 cups kale, stems removed, thinly sliced
  • 1 cup almonds, toasted and chopped
  • 1 apple, chopped (I usually use Golden Delicious or Pink Lady, but anything will do)
  • 1 cup dried cranberries
  • Juice of 1 orange
  • 2 TB red wine vinegar
  • 1 TB agave (you can substitute with raw honey, also)
  • Juice of one lemon
  • Salt and pepper to taste

– Pour lemon juice over sliced kale and massage until slightly wilted, for about 10 minutes. Set aside.

– In a separate bowl combine juice of orange, coconut oil, red wine vinegar, agave and salt and pepper.

– Add apple, cranberries, almonds and dressing to kale and toss to coat. Serve immediately.
