This recipe is basic and easy, requiring minimal cooking time and few ingredients — just the way I like it.

I make this salad often, as it seems to please everyone, and it’s easy to tote along to a party or summer BBQ since it can be made in advance and it keeps well.

If you are looking to switch this up a bit, throw in a chopped jalapeno; a sliced avocado is another great add-in. Enjoy!

Fresh Corn and Tomato Salad Recipe

  • 4 ears of corn, sliced from cob
  • 2 TB white wine vinegar
  • 1 small sweet onion, diced
  • 2 scallions, thinly sliced
  • 1 1/2 cups red or yellow grape tomatoes, halved
  • 1 TB olive oil
  • 2 TB fresh lime juice
  • Fresh black pepper, to taste

– Grease pan with a bit of oil and cook chopped onion; after onion is translucent add in corn kernels and cook over medium heat for 3 or 4 minutes. Remove from heat.

– While corn is cooling, whisk oil, lime juice, vinegar and pepper in a bowl.

– Pour the oil/lime juice/pepper/vinegar mixture over cooled corn.

– Toss in scallions and tomatoes.

– Serve at room temperature.
