Unfortunately for her, I know processed sugar is the devil and any super-sugary indulgence I give into is never worth the headachy “I feel like shit” aftermath, so I try to stay away. And recipes like this one make that way easier to do. These are sweet, chewy, rich and super filling; they are my go-to when my sweet tooth rears its ugly head, and they have never not satisfied it.

I make these for my family — filled with some not-so-clean, non-Paleo eaters — every holiday, and no one is the wiser of what is — or isn’t — in them; they all get gobbled up every time. Every. Damn. Time.

And they are so quick and easy to boot. Eat up.

Date and Nut Butter Chocolate Paleo Dessert ‘Truffles’

  • About 20 soft Medjool dates (Natural Delights or other smaller vendors always have better quality dates than big brands like Sunkist in my opinion. You will have to pit them yourself, but its worth it.)
  • 3 TB cashew butter
  • 2 TB almond butter
  • 1 3 oz dark chocolate bar
  • 1 TSP coconut oil
  • Sea salt (for garnish)

– Combine dates — pits removed — and nut butter in a food processor until well combined, about 2 minutes. Should be the consistency of a sticky, crumbled paste.

– Remove mixture from processor and roll into approximately 1-inch diameter balls. Place on a tray or plate. Transfer to freezer for 10 minutes.

– Meanwhile, melt chocolate bar with coconut oil over low heat, stirring often.

– When melted, remove from heat and drop balls into chocolate one or two at a time, using a spoon to roll them in chocolate to coat and then gently lift them out and place them back on plate or tray.

– When all the balls are coated, sprinkle the tops with sea salt and place back in the freezer. Remove from freezer a few minutes before serving. Yum!
