And as the days get longer here in New England and my house starts to look less like an igloo and more like a home, I’m starting to get especially anxious for the first signs of spring.

I stole this salad recipe from my sister — only making some Paleo-friendly additions of my own — and making it this time of year was with a bit of wishful thinking — I was feeding into my end-of-winter angst — as it is very summer-like, anything with watermelon is, in my opinion. But no matter, as it is delicious whether there is sun in the sky or snow on the ground.

Just pretend you are enjoying it by the pool with a glass of chilled white wine in hand — the power of positive thinking, right?

Quick and Healthy Paleo Turkey Cutlets Recipe

Paleo turkey cutlet, healthy turkey cutlets, easy turkey recipeChicken and pork are regulars in my dinner entree rotation — turkey is the other white meat in my house.

Unfortunately, preparing turkey as the pilgrims intended — although delicious — can be a major pain, but if you lose the majority of the bird and keep the breasts, you get all the goodness without all the work.

‘Almost Paleo’ Roasted Sweet Potatoes with Bacon

Roasted Sweet Potatoes, Paleo Sweet potatoesWhenever I’m wanting something a little “sluttier” for a meal I always look to starchy veggies and bacon — turkey or pork will do — or a poached egg as an add-in (throwing one over a salad makes a world of difference).

The sweetness of the maple and potatoes and the saltiness of the bacon in this dish makes for a delicious, gooey and rich combination. You can use regular sweet potatoes, purple sweet potatoes, or a combination of both. I tend to prefer the purple, as they are a bit less sweet and less dense. They can be hard to find, however, so you can stick with their more-findable orange cousin if need be.

Spaghetti squash salad, creamy spaghetti squash, spaghetti squash recipeMy favorite kind of vegetarian dishes are those that feel like they aren’t. Nothing is worse than trying to pass off a side of veggies as an entree.

This vegetarian plate leaves nothing to be desired. It’s a warm, hearty plate of deliciousness that offers a ton a flavor — perfect for those frosty days. It gets its creaminess from the goat cheese, which I love paired with the bright lemon flavor, pine nuts and black olives (I’m kind of a black olive junky). It’s one of my favorite meals to throw into the mix when I’m getting tried of my usual proteins; it always crushes any boredom I’m having with my common dinner routine. Enjoy!

Paleo Spicy Pork Recipe with Thai Chili

spicy pork recipe, thai pork, healthy pork recipeI love making marinades in the blender. It’s so simple — saving me from tedious mincing and dicing — and it’s super quick.

This sweet and spicy pork marinade is one of my favorites. You can amp up or tone down the heat based on which chili you pick and whether or not you choose to omit the seeds. I tend to always go for two Thai chili, sans seeds, and I think it delivers the perfect amount of spice that is nicely complemented with the sweetness of the juice and the sugar. If you are looking for something a little tamer, I would go with jalapenos or something milder, but I recommend going for the fire if you can handle it — it’s so yum — and it pairs great with a frosty brew 🙂

This is a yummy and healthy way to enjoy eggplant that is perfect for this time of year when we are all waving goodbye (reluctantly) to summer and there is a bit of a chill in the air. It has a warm, hearty and creamy nuttiness to it without being too heavy.

While this recipe is great with your standard purple eggplant, I prefer to make it with white eggplant, which tends to have creamier and less bitter flavor than its more well-known relative. Enjoy!

Spicy Sauteed Eggplant and Zucchini Recipe

Sauteed Eggplant and Zucchini recipe, eggplant and squash recipeFarm shares are awesome. Not only do they ensure you are buying certified organic produce from local businesses, but they also force you to cook things you may not buy on your own.

Eggplants always throw me for a loop.

I threw this together based on my trepidation around the eggplant and the other veg I got in my farm share that day, and it turned out great. This could be served on its own, over some spaghetti squash or with some crackers as an appetizer if you haven’t jumped on the grain-free train.

Feel free to switch out the zucchini and summer squash with the veggies of your choice; most likely whatever you have kicking around in your fridge will work.

Garlicky Pork Chimichurri Marinade and Sauce Recipe

Chimichurri Pork marinade, Chimichurri  sauce recipeA good garlicky and tangy chimichurri is in my top five favorite sauces to pair with meat. It’s always been one of my fail-safe dishes to order when dining out, and quickly became one of my favorite meals to prepare at home, not only because I love the flavors, but its really easy to whip up; just throw all the ingredients in a food processor and press the ON button — easy peasy.

I used to make it only when I was serving skirt or flank steak, but I recently experimented with a pork chimichurri, and loved the result.

This sauce/marinade is an Argentinean classic, and I try to keep my version close to the traditional, only adding a little extra spice; why mess with a good thing, right?
