Super Simple Paleo Baked Cod Recipe

Paleo baked cod, healthy baked cod, healthy fish recipesWhile I nearly always order fish when I’m out to eat, I always feel like I don’t cook fish enough — which is a damn shame because it is one of the healthiest proteins around. This always leads to me go on weekly kicks where I cook nothing but fish. This is one of those weeks.

During my nothing-but-fish cooking binges cod always makes it way into the rotation more than once. It’s light, yummy — and cheap! I love me some salmon, but filets can be pricey, while a cod loin is half the cost.

All of my fish recipes are basic and simple. The few times I have tried anything fancy or used bold flavors with fish, it always overpowers it, and I just feel like I’m eating spice — all of the fish flavor is lost, and then what’s the point, right?

Yum! Best Healthy Shrimp and Grits Recipe

healthy shrimp and grits, paleo shrimp and grits I tend to feel really proud of myself when I pull a dish like this off.

Anybody can make a salad, right? But to take a dish that is notoriously unhealthy and recreate it in a healthy way? Now that deserves a pat on the back.

Alright, I’ll deflate my ego now.

My husband loves shrimp — and grits — so this one was for him; and it was approved by his normally-not-clean-eating palate, so that’s a win in my book. This dish has the same flavors and textures as the a non-clean version, but without all the fatty and salty crap that comes with it; it is one of my faves. Enjoy!
