Brussels sprout sweet potato hashWhen the temperature drops and the leaves begin to turn that’s my cue to make a switch from cooking my light summer salads to making entrees that are warmer, fuller and more conducive to the weather outside. This root vegetable hash is like a warm sweater. It warms my soul — or at least my belly.

It’s the perfect fall dinner — or breakfast — in my humble opinion. It’s hearty — with or without the chicken if your a vegetarian or would just rather nix it — and it is just the right amount of slutty without going completely off the reservation, thanks to the bacon and pouched egg.

Quick and Easy Paleo Vegetable Stir Fry

paleo stir fry, healthy stir fryCabbage is one of my favorite greens. I love its mild flavor and texture when cooked, and it’s loaded with health benefits.

This is my go-to when I forgot to go to the market, the fridge is looking pretty bare, and a salad with a protein topper isn’t going to cut it. And also when I’m feeling lazy, as this dish is quick, easy and nearly impossible to mess up. Everything in here you will likely have in your fridge at any given time, and even if you don’t, you can work with whatever vegetables you have lying around. Easy peasy.

You could sub out red cabbage for the green, as well, but I definitely prefer the green. Additionally, you could switch out the ground chicken for turkey, steak or beef. This is totally interchangeable with protein and veggies; that’s the beauty of it! Enjoy 🙂

‘Happy Summer’ Spice Rub for Burgers

Outdoor grilling is the best and I love me some summer burgers on the grill. This spice rub is my usual for a burger. Its flavorful and has a little heat, but not too much to turn those off with a tamer taste for spiciness, and it goes great on a turkey, beef or chicken burger.

I usually enjoy these burgers on a lettuce bun with a pickle and some avocado or over a bed a greens. The recipe usually makes enough to season about 4 burgers.

The ‘It Never Gets Old’ Spicy Paleo Chicken Rub

Paleo chicken rub, spicy paleo chicken, clean eatingI love playing around with spice rubs for chicken and beef. They can throw a wrench into a boring dinner routine and you can make them in bulk and keep them in your pantry for simple dinners with virtually no prep for the rest of the week. Easy peasy.

While some of my more inventive — and unsuccessful — rubs have a short shelf life, this one has some permanent real estate in my cupboard. It has great flavor and a little spiciness, and you could use it on chicken or pork. T

his recipes will usually get me through three meals that utilize around a pound of meat. Enjoy!

Oven-Baked Paleo BBQ Chicken Recipe

Paleo BBQ, Paleo BBQ chicken, BBQ chicken breastsWhen giving dishes that are on the unhealthier side a more nutritious makeover, they can often come out tasting .. er.. gross. And that was the case when I tried recreating a healthier BBQ chicken entree on my first few attempts. Sigh.

But after a few trial-and-error attempts of crafting a delicious non-processed, all-natural BBQ sauce, and not ending up with dried out chicken breasts that don’t hold a candle to the original recipe’s much moister thighs or legs, I think I got it right.

Although it does add a bit of time to the process, brining the chicken here makes a difference, as it gives you a bit more wiggle room related to cook time to prevent sucking all the moisture out of it.

Grilled Tequila Lime Chicken Recipe

tequila lime chicken, lime chicken marinade, tequila chicken marinade, grilled lime chickenI’ve been making this recipe since my college days — probably because in my early twenties having a bottle of tequila in my freezer at all times was something I could count on.

And while I don’t enjoy tequila as much as I did back then, I still love it in a marinade. If you prefer a milder flavor, omit the seeds from the jalapeno, or pull the jalapeno altogether.

Serve this over a salad or with some cauliflower rice and a scoop of guacamole; it’s delicious (just ask my pup who is waiting in angst for a piece to drop!) 🙂

As time has crept on, there have been  hundreds of variations built on this classic base, but there is nothing wrong with kicking it old school and using this flavor profile as it was originally intended — being simple isn’t a bad thing.

This chicken dish showcases the original flavors perfectly. It’s cooked on top of the garlic and lemons in the pan, giving it maximum flavor. I usually pair this over a simple veggie dish, some cauliflower rice or a nice salad. Enjoy!

Paleo Balsamic-Dijon Chicken Marinade Recipe

chicken marinade recipe, chicken marinade with balsamic and honey mustard, paleo chicken marinadeThis chicken marinade is super simple to make — you can whip it together in about 5 minutes — it’s tasty, and is totally Paleo-friendly and gluten- and dairy-free. It’s one of my husband’s favorites, so I make it several times a month, and it never gets old. It has a bit of spice to it, so if that isn’t your thing, you can omit the red pepper flakes to tame it a bit.

This pairs well with any cut of chicken — breasts, thighs, etc. — and makes a good marinade for chicken wings on the grill or in the oven, as well as for different cuts of pork.

While I have cooked this on the stove top and the grill several times, I prefer this baked, since you can cook the chicken in its marinade and spoon a bit of it over the final product as a sauce for some extra flavor. Enjoy!

Zesty Paleo Chicken Marinade Recipe

Paleo chicken marinade, lime chickenChicken is a go-to protein in my kitchen. It’s a healthier alternative to beef, and can be done in a ton of different ways. Since I eat it so often, I try to switch up how I cook and season it so I don’t get bored, and this marinade is one of my favorites.

I love Mexican-influenced flavors, and this dish always reminds me of Mexico. The chili powder and jalapeno give it a nice kick, and pair well with the mustard, citrus and coconut aminos.

While this dish isn’t the prettiest — once cooked it takes a dark green, muddy color — its super tasty and flavorful. Serve with some cauliflower rice, roasted veggies, or guacamole and you’ll feel like you’re south of the border.
